    焦糖布丁

    做法

    布丁材料:鸡蛋4颗  牛奶500克 砂糖50克

    焦糖材料:砂糖5大匙 水1又1/2大匙



    布丁做法:


    1. 牛奶500克 +砂糖50克用小火略煮至糖化了即可(不要煮太烫了)

    2. 鸡蛋4颗打散

    3. 将煮好的牛奶倒入(牛奶太烫的话会把蛋烫成蛋花哦,如果太烫放凉片刻)

    4. 用手打将鸡蛋和奶完全混合. 混好的蛋奶浆用面粉筛过筛两次,这样做出来的布丁才滑嫩. 并静置30分钟. (没面粉筛的可以不筛 我妈不知道把面粉筛放哪了 我没找到)

    5. 在布丁模上涂上薄薄的一层黄油(方便脱模)


    焦糖做法:

    6. 小锅内放入砂糖5大匙 水1又1/2大匙

    7. 开小火慢慢将糖煮至溶化.煮至有些金黄色的时侯就可以熄火了.(如果迟熄火,焦糖很容易煮过头,而吃起来有糊味)



    8. 煮好的糖浆乘热倒入布丁模内,每个薄薄的一层即可.待焦糖凉后再倒入蛋奶浆

    9. 烤盘内装大量热水,不要漏出来就行了.

    10. 165度倒数第二层40分钟.(可根据个人的烤箱和模具大小调节温度 我足足烤了一个多小时)



    11. 热的布丁太软不好脱模,最好等冷却后再脱模(我直接放冰箱里冰了几个小时的),脱的时侯用匙在四围轻轻压一下
